Johnny Trasti

Chef, founder and one of the people behind Trasti & Trine. He is known for his strong focus on Arctic ingredients, local food culture and sustainable cooking in Finnmark. Johnny has over 30 years of experience as a chef and was named Norwegian Chef of the Year in 2009.

His cooking is built largely on the nature around Alta: fish from the fjord, reindeer from the plateau, berries, herbs and ingredients from local producers. He is committed to sharing the stories behind the food and creating experiences that connect with the landscape and culture of the north.

Before Trasti & Trine, Johnny worked among other places at Sorrisniva, where he served as head chef and was involved in building the well-known ice hotel. He has also worked with ice sculptures and learned techniques from Japanese ice artists.

The taste of the seasons

It is nature that decides what you will taste and see when you come home to us. We follow the seasons in Finnmark, and the menu changes with the nature around us. Spring brings fresh fish and the first green growth after winter. Summer offers the midnight sun and ingredients from sea, mountains and our own garden — everything from wild salmon to herbs and wild greens.

Organic focus

We want the food we make to reflect the nature and culture around us. Good ingredients are the foundation of everything we do, and we primarily use Norwegian, fresh and natural ingredients. We care about origin, quality and sustainability, and choose organic and locally sourced ingredients whenever possible.

At the same time we harvest much directly from the surrounding nature. From the icy sea, the open plateaus and the short, intense seasons of the north. This yields ingredients with genuine taste and character, shaped by the Arctic climate.

Alaska Bar

The Alaska Bar at Trasti & Trine is a warm, atmospheric meeting place in the forest, where music, stories and Arctic ambience set the tone for the evening. Inspired by Alaska and the world of dog sledding, it is a place for calm, presence and good conversations.

The bar is a natural landing place when you arrive, with a collection of over 200 vinyl records you can play yourself. Here you choose the evening's soundtrack, whether it's while a winter dog team glides past outside or while summer light rests over the yard on a quiet evening.

The building also carries history, being one of the early constructions erected after World War II, preserved and passed on through time. The interior is shaped with references to life in Alaska, bringing a sense of northern expeditions and dog sledding into Alta.

During Finnmarksløpet and the Iditarod the bar becomes a gathering point where the races are followed live, surrounded by guests, enthusiasts and stories from the trail.

The bakery

Those who are up early in the morning might notice a wisp of smoke rising from one of the smallest houses on the yard. That means Trasti is up early and firing the stone oven in the bakery. Soon the scent of freshly baked bread drifts between the houses. How about a hearty sourdough loaf, perhaps a bread with birch sap and juniper berries?

In winter we are open every Saturday, when you can drop by for coffee and sweets at our Saturday café.

In summer the café is open every day from 12:00 to 15:00, with a larger selection on weekends.

Why not make your weekend café visit with us? Our outdoor café is open all summer. Here you can enjoy both lunch and delicious cakes from our bakery. Everything is of course freshly made and mostly organic and locally sourced. You can take your coffee by the fire pit if you like, or perhaps inside Gamma if the Finnmark summer feels too brisk. Visit the dog yard if you wish, or take a closer look at our kitchen garden. You are very welcome.

Meat cooking course

In our meat course at Trasti & Trine we work closely with the ingredients and learn how meat from the north can be used with respect, knowledge and flavour. This is about the whole process from selecting ingredients to preparation and understanding taste, technique and craftsmanship. The course gives you insight into traditions, seasonality and sustainability, while also letting you be active in the kitchen and prepare dishes that reflect the surrounding nature.
