COOKING COURSES AND DINING

I have worked as a cook/chef my whole life. Since 2005 I have worked with local food in Finnmark. I have been able to create food from the world’s purest and best produce, which has grown and lived on the mountain plateau, in the sea and the surrounding forests, and has a unique history and flavour. I wish to convey this to our guests through experiences, culinary courses and dinners here at Trasti & Trine.

LUNCH COURSE IN NATURE’S KITCHEN

Fire, stone, wood and smoke. Fish from the fjord, potatoes from the neighbouring farm, reindeer from the mountain plain, bread straight from the stone oven and sweet berries from the forest right behind the house. Local produce and pure, honest flavours are two of the hallmarks of North Norwegian cuisine. There is far more to a meal than the actual food we eat. I, Johhny Trasti, will welcome you at our Gamme and outdoor kitchen. While you enjoy a few samples, I will tell you about the food and food traditions in Finnmark. We will then plan the lunch of the day. The choice of menu and produce will vary throughout the season, but there will be treats from the smoking oven, bread/pastry from the baker’s oven, various ways of preparing game or fish and the dessert of the day. You participate actively in the entire process right through to the meal being served, and I will gladly share my knowledge and experiences with you.

Smoked wild salmon with eggs from our own poultry run and seasonal vegetables. Juniper and Pasvik cheese bread and Røros butter. Thinly sliced reindeer meat with salt-baked Gulløye potatoes from Tangen and lettuce from the garden. Rhubarb pie

 

We will enjoy the meal outside or in the Gamma.  Tea/coffee is included and other drinks are available for purchase. The entire lunch course is held outside so it’s important to adapt your clothing to suit the weather!

A CULINARY JOURNEY WITH TRASTI & TRINE

You now have the chance to join Trasti and Trine for a major culinary journey. We call this package “Bordet fanger” (a deal is a deal) as you need to book all the places at the table. We compile a menu comprising many flavours and cooking methods, but the nature and the seasons always provide the basis for the food we serve. We do our utmost to find the best produce and culinary history from the entire Northern Cap region. For us it will always be just as natural to use produce from Northern Sweden as from Northern Norway. The most important thing is always the quality, history and supplier of the product.

We can offer this package to 12 guests or fewer. However, the price remains the same regardless of the number. I compose a 12-course tasting menu from the region based on the available seasonal produce.

• We prepare a three-course evening meal

Theme: Game

The following is included: working with food and modern techniques, recipes and short apron.

This is a hunting course spread over two days. This cooking course includes the preparation and processing of game. We cover the basics of butchering game. Based on the game and good we have, we compose and prepare a dinner for the first evening and the large menu for the second evening. On the first evening we prepare a three-course dinner and conclude the course with a five-course dinner based on game from Finnmark.

PRIVATE COURSE

You now have the opportunity to have a private master class with Johnny Trasti. We start at 10am by planning and setting the menu. The menu will be based on seasonal ingredients. You will work with modern techniques and methods. You will be served lunch at 12 noon. You will be involved in creating and preparing the dinner menu.

You now have the opportunity to cook with seasonal produce and work with exciting products, techniques and methods. You will gain an insight into how we plan and compose a menu. The course lasts two evenings. On the first evening we prepare a simple three-course dinner, but the main focus will be day two when we prepare for the evening’s big dinner.
